Crunchy Spinach and Apple Salad.
I love salads. The crunch, the textures, the flavors. Everything about salads is to die for. And truth is, salads are extremely easy to make especially if you get the basics right. Fresh produce is key. But apart from that, what really brings your salad alive is the dressing. And dressings can be pricey or sometime just plain unappealing or just unavailable. I mean, apart from 1000 islands, its quite rare to find salad dressings at your nearest supermarket. That’s where these recipes come in handy. In these recipes I’ll be showing you how to make delicious salads accompanied by different salad dressings that you can make at home.
To start us of this week, I’ll start of with one of my most favorites. Reason being it’s so easy to make because you almost always have everything readily indoors.
For the Salad
Bunch of fresh roughly chopped spinach (I can never stress enough on the freshness part.)
1 red Apple diced
1 Avocado diced
1 carrot julienned (Cut into thin strips)
1 tablespoon of grated beetroot or 1 cup of shredded purple cabbage
For the dressing
2 tbsp of vegetable oil (Not necessarily olive)
½ clove of garlic minced
1 cm of fresh ginger minced
¼ cup of white vinegar
Pinch of salt
2 tablespoons honey
¼ tsp black pepper
Some chilli flakes/powder/fresh chilli (Optional)
Mix all the dressing ingredients in a small bowl and mix until well combined. Taste and if you find it a little strong, add some water to make it milder.
Place all your vegetables and apple MINUS (To prevent squashing it into a pulp) the avocado, drizzle some of the dressing and mix well (A little goes a long way).
Add your avocado and toss lightly.
Side Note: Don’t worry if you have some dressing left over. You can put it in a small container and refrigerate for your next salad.
